Totara Essence is a food grade version of an ingredient called Totarol™ which is a natural extract from the Totara tree (Podocarpus totara), a species unique to New Zealand. Totarol and related compounds are produced in the Totara tree after approximately 150 years of growth and protect the tree from bacterial attacks, insects, diseases and other environmental influences, allowing the tree to grow for up to 1,000 years.
The Totara Essence is most potent when extracted from the heartwood of the Totara tree and we capture this live giving essence and add it to our honey.
Totara Essence is produced through a gentle process called supercritical extraction from the chipped heartwood of the Totara and this process allows it to be certified Organic by Bio Grow New Zealand.
Once extracted it is prepared in a special manner to meet the highest standards in GMP facilities to as Totara Essence.
On consumption of Totara Honey, you will notice a warming sensation in the throat and
stomach; this effect generated from active compounds in Ginger called Gingerol and
Zingerine as they progress through the body.

Totarol the key active compound in Totara Essence is an anti-oxidant and has broad-spectrum antibacterial properties. It is active in low doses against Staphylococcus aureus (including methicillin resistant [MRSA], epidemic, community and multi-drug resistant strains), Streptococcus pneumoniae(penicillin-resistant), Streptococcus pyogenes (erythromycin-resistant), Enterococcus faecalis (high level gentamicin-resistant), Enterococcus faecalis (vancomycin resistant) and Escherichia coli. (including veterinary isolates)
When our research team were looking at creating the Totara Honey formula, they spent
considerable time identify other synergistic extracts that may compliment Totara Essence and identified Ginger as being the right synergist.
Ginger (Zingiber officinale Roscoe) has been used widely as a food spice and an herbal
medicine and it possesses antimicrobial and antifungal properties, as well as several
pharmaceutical properties. The Ginger Extract used in Totara Honey is processed in the same manner as Totara Essence by super critical extraction which enables an extract that is up to 20 x the strength of pure dried Ginger - offered substantially more actives in particular the main active compound Gingerol.
The Ginger Extract in Totara Honey offers high activity in low doses against gram negative bacteria in particular Helicobacter pylori. As well high oncentrations of compounds called shogaol which are being examined by pharmaceutical companies as
candidates for the treatment of cancer.

Directions for Use:
Take one teaspoon (about 10 grams) of honey and mix it with about 150ml-200ml of hot or cold water.
Take as required before food.
